Sealing is the one piece of paver maintenance that actually matters, and it is also the one where the advice ranges from "never" to "every year" depending on who is selling what. Here is the honest version for this climate, including the waiting period that gets skipped and the test that takes ten seconds.

The interval, and what moves it
Manufacturer guidance lands on a range rather than a number, because usage varies more than materials do. The commonly published intervals are every two to three years for high traffic driveways, three to four for moderate traffic driveways, and four to five for low traffic decorative areas like a side path nobody uses.
Southern California pushes you around inside that range rather than outside it. Two forces pull in opposite directions.
Working against you: UV. We get strong sun essentially year round, and UV degrades sealer. An inland driveway in Woodland Hills or Tarzana is under load from that constantly.
Working for you: no freeze thaw. A significant part of what destroys sealed surfaces in other parts of the country is water getting into the surface, freezing, expanding and breaking it apart. ASTM C936, the standard concrete pavers are made to, includes a freeze thaw durability requirement of no more than 1 percent mass loss over 50 cycles. It is a real specification and it is essentially irrelevant here, which is one of the few ways this climate is easy on hardscape.
The local factor that shortens the interval most is coastal damp. Properties in Santa Monica, Oxnard and Ventura sit in marine layer moisture for a large part of the year, and joints there never fully dry between wettings. Those surfaces want the short end of the range. A pool deck being deliberately soaked all summer wants shorter still.
The first seal has a waiting period
This is the part that gets skipped, and it causes damage that cannot be undone.
New concrete pavers push out efflorescence, a white chalky mineral haze, as they cure. It looks like a defect and it is not. It surfaces, and then it washes and cleans off, and then the paver looks how it is going to look.
Manufacturer guidance is to wait roughly 30 to 60 days before the first seal so this can happen. Seal before it does and you lock the minerals in under the sealer. The result is permanent discoloration and adhesion problems, and correcting it means stripping the sealer, which costs considerably more than waiting would have.
So if somebody offers to seal a brand new paver surface on the day they finish laying it, that is worth a question. Not necessarily a red flag, because some sealers and some situations differ, but they should be able to tell you why.
The ten second test
Do not go by the calendar. Go by the surface.
Pour a small amount of water on the pavers. If it beads and sits, the sealer is intact. If it soaks straight in and darkens the paver, the sealer has worn through and it is due.
Do it in several places, because wear is not uniform. On a driveway, the tyre tracks and the spot where the car turns will fail years before the edges do. On a patio, the route people actually walk fails first. Testing one convenient corner tells you about that corner.
Three other signals worth watching: colour looking flat or chalky, joint sand sitting visibly below the paver chamfer, and any growth appearing in the joints.
Why sealing is really about the joints
Most people think of sealer as protecting the face of the paver from stains and sun. It does that. But the more important job is holding the joint sand in place, and joint sand is structural.
An interlocking paver surface transfers load from one unit to its neighbours through the sand between them. That is what makes it a field rather than a set of loose tiles. When joints deplete, every paver starts working alone, and a surface where units work alone is a surface that starts rocking, settling and opening up.
This also explains the weed question properly. Weeds between pavers are almost never coming up from below, because a correctly built surface sits on several inches of compacted base that roots find hostile. Seed blows in from above and needs somewhere to land. Full, hardened joints give it nowhere. Depleted joints give it a sheltered pocket that collects debris and holds moisture. So sealing prevents weeds indirectly, by protecting the sand, which is why re-sanding and sealing together is the actual fix rather than sealing alone.
The mistake that undoes all of it
Pressure washing at close range will strip joint sand out of a paver surface in a single afternoon. We have been called out to surfaces that were completely fine until somebody cleaned them thoroughly.
If you are washing pavers, keep the wand back and the pressure moderate, and expect to re-sand afterwards regardless. A surface that looks immaculate and has empty joints is in worse shape than one that looks slightly tired and is fully sanded.
Choosing the finish, which is not reversible
Sealers range from matte to high gloss wet look. The gloss finishes deepen colour dramatically and a lot of people love them. Two things to know before committing.
First, a wet look sealer can reduce traction when the surface is wet. On a patio that matters during rain. On a pool deck, where people arrive soaking by design, it matters constantly, and you should ask specifically for a formulation with a slip resistant additive.
Second, the look is difficult to walk back. Stripping a sealer is a real job. We test any sealer on a small area out of the main sightline first, wet it, and let you look at it before the whole surface is committed. Ten minutes of that prevents a decision you live with for years.
When sealing is not the answer
The honest limit of this whole article: sealing is maintenance, and maintenance does not fix structure.
Walk your surface and put weight on individual pavers, especially near edges and where vehicles turn. If units rock underfoot, that area has lost support beneath it, and that is a base problem. Re-sanding and sealing a surface that moves will make it look better for a season and change nothing about why it is moving.
